The Foolproof Hard Boiled Eggs Method
Hard boiled eggs are in my weekly routine. I love them for breakfast and as a snack, but they can often be difficult to make at home. This is my tried and true method that I use all the time to make sure the shells come off easily and the yolks are cooked perfectly.
Here are the steps to my foolproof hard boiled egg method:
- Bring a large pot of water to a low boil. Add the eggs and boil them for 10 minutes. Meanwhile, set up an ice bath.
- Once they've boiled for 10 minutes, use a slotted spoon to place them into the ice water. Allow the eggs to cool in the ice water until warm, about 5 minutes.
- Peel the eggs by tapping both rounded ends first on the counter, then gently rolling the egg on it's side to crack the shell. The shell will slide right off!
Laura Ashley's Tip: For a shortcut, I often use store-bought frozen shrimp salad that I thaw and spoon on top. It's the best party tip for those busy evenings!
Ingredients for Deviled Eggs with Shrimp
- Large Eggs: The best size for filling and eating. I'm showing you the foolproof method for preparing hardboiled eggs.
- Mayonnaise: Creamy and rich to make that smooth egg yolk filling texutre.
- Creole or Dijon Mustard: Creole mustard has a bit of a spicy kick for the filling. If you prefer a milder flavor, use Dijon.
- Cajun Seasoning: Adds the spicy and flavorful flair to the filling.
- Lemon Juice: The acid that brightens all of the flavors and enhances each ingredient's flavor.
- Shrimp Salad: The delicious topping, make your own or use store-bought. If the store-bought is frozen, thaw before serving.
- Garnish Options: I recommend paprika, Cajun seasoning, thinly sliced jalapeno, chives, or a small piece of bacon. Get creative!

How to Make Cajun Shrimp Deviled Eggs
- Hard boil the eggs, see my tried and true method above!
- Halve the boiled eggs, remove the yolks, and place the yolks in a separate bowl. Place the hollowed out egg whites on a serving tray.
- In a medium mixing bowl, mash the eggs yolks with a fork until smooth. Add the mayonnaise, creole or dijon mustard, Cajun seasoning, and lemon juice. Mix until well combined and creamy.
- Spoon or pipe the egg yolk mixture into the egg whites.
- Top each deviled egg with 2 shrimp.
- Garnish as desired.
Pro Tips for Recipe Success
- Make your own Creole seasoning. This is easy to make at home with spices already in your pantry.
- Combine 3 tablespoons smoked paprika, 2 tablespoons garlic powder, 2 tablespoons ground black pepper, 1 tablespoon kosher salt, 1 tablespoon onion powder, 2 teaspoons dried oregano, 2 teaspoons dried thyme, 1 to 2 teaspoons cayenne pepper.
- Swap for homemade shrimp salad. Simply boil or saute medium-sized shrimp (31/40 pieces per pound) until opaque and pink, 2 to 3 minutes. Allow to cool then combine with celery, mayonnaise, and a pinch of paprika.
- Use a piping bag or ziptop bag to easily add filling. Place the egg yolk filling in a bag and snip the end. This will help easily and cleanly pipe the filling into the whites.
- Peel the hard boiled eggs while warm. This is essential in helping the shell release easily. Rinse under water as necessary to help as well.
- Make the filling mild in spice. If you want a mild filling, use regular mustard and paprika instead of Creole mustard and cajun seasoning.
Storage and Make Ahead Instructions
Store any leftover deviled eggs in the fridge loosely covered with plastic wrap for up to 4 days. Do not freeze the eggs, this will change the texture.
To make the recipe in advance, you can boil and peel the eggs up to 2 days ahead. The egg yolk filling can be made up to 2 days in advance as well and stored in a ziptop bag or container with a piece of plastic wrap on top to prevent oxidation.
When ready to serve, simply pipe in the filling and garnish!
What to Serve with Cajun Deviled Eggs with Shrimp
This delicious deviled eggs with shrimp appetizer is great paired with so many things. I love adding them to a brunch menu with a spinach and bacon quiche, homemade biscuits, or sausage egg muffins.
They are also perfect at lunch or dinnertime as a side dish or appetizer. Serve them with creamy garlic pork chops, shrimp scampi, or Coca Cola ham. Add a seven layer salad, House salad, or gremolata green beans on the side for a complete meal!

Yes, of course! Use your favorite seasoning blends in the yolk mixture.
Most of the spices will already be in your pantry. I recommend smoked paprika, garlic powder, black pepper, garlic powder, onion powder, kosher salt, dried oregano, dried thyme, and cayenne pepper.
If you are making the shrimp from scratch, I recommend poaching the shrimp for 2 minutes in boiling water, or sautéing in olive oil over medium-high heat for 2 to 3 minutes until pink and opaque.
Cover any leftovers loosely with plastic wrap and store for up to 4 days in the fridge.
