Chopped Salad
Who wants a new, exciting salad?? That’s right! I used the words “exciting” and “salad” in the same sentence…because they can coexist!

Ingredients
Salad
- 3 heads romaine lettuce chopped
- ½ head kale chopped
- 1 cucumber peeled, seeded and diced
- 32 slices salami diced
- 8 oz fresh mozzarella diced
- 15 oz garbanzo beans drained
- ½ cup shredded parmesan
Dressing
- ½ cup olive oil
- ¼ cup apple cider vinegar
- 1 tablespoon dijon mustard
- ½ teaspoon oregano
- 1 teaspoon black pepper
- ½ teaspoon salt
- 2 garlic cloves minced
Instructions
- Combine dressing ingredients in a small bowl and shake or whisk until emulsified.
- Pour 2-3 tablespoon of the dressing over the drained garbanzo beans and refrigerate 20 minutes.
- Meanwhile, prepare vegetables, meat, and cheese and combine in a large bowl.
- When ready to serve, toss the salad with marinated garbanzo beans and dressing (amount as desired). Top with shredded Parmesan.
