Smoked Bologna Sandwich

Simple and sentimental. A bologna sandwich straight from the deli or fried with a slice of cheese and smear of mayo is just the fix on beautiful spring day. Smoked bologna took this sandwich to the next level of goodness!

Ingredients

  • 2-3lb beef bologna
  • 1/3 cup brown sugar
  • 2 tbsp mustard
  • 2 tsp soy sauce
  • 2 dashes Worcestershire sauce
  • Barbecue Seasoning
  • Bologna Sandwich accoutrements
  • Recipe

    Preheat the smoker to 250°F. Remove and discard the outer casing from the bologna. Score the bologna a quarter inch deep and inch apart from top to bottom at an angle. Rotate and score again, forming a criss-cross pattern. In a small bowl, whisk together brown sugar, mustard, soy sauce, and Worcestershire sauce. Rub the marinade all over the bologna, pushing it into the scored areas. Sprinkle the barbecue seasoning on all sides of the bologna. Transfer to the smoker and smoke with the lid closed for at least 3 hours. Slice the bologna and assemble a sandwich with your favorite toppings or cut into cubes and serve as an appetizer.
