This perfect guacamole is creamy, fresh and irresistibly delicious! It's perfect added on top of your favorite Mexican-inspired dishes, on a tortilla chip or just eaten from a spoon!
I've had many a guacamole, but this recipe is stand-apart delicious! In 2018, my family and I visited a restaurant along the Riverwalk in San Antonio, Texas called Boudros. On their menu, they serve a "Guacamole for Two" that they prepare table side. As I watched them make it, I took mental note of every step. With just one bite, the guacamole game was changed.
Since I can't just visit Boudros any time I crave their guacamole gold, I felt it necessary that I do my best to recreate it! While I don't have their "exact" recipe, mine came pretty close. There are 2 things unique about this guacamole that makes it stand apart: fire roasted tomatoes and fresh orange juice. The level of flavor these give the guacamole will stop you in your tracks. They add an amazing acidity as well as a perfectly balanced sweetness.
Like any delicious guacamole recipe, this guacamole is incredible served with tortilla chips and dolloped on top of so many Mexican-inspired dishes. I originally shared this recipes in 2020, and to this day, I still get messages that this is the best guacamole they've ever had. If you're a guacamole fan, hold your britches. It just got even better!

How to Make This Recipe
- Cut the avocados in half lengthwise, remove the pit, and scoop out the flesh into a mixing bowl. Add the diced red onion, cilantro, fire-roasted tomatoes, lime juice, orange juice and salt.
- Using a sharp knife, pastry cutter or meat chopper, pierce and mash the avocado with the other ingredients until the avocado is in bite-sized pieces. Fold with a spatula to ensure all of the ingredients are incorporated well.
- Taste the guacamole and adjust the seasoning as needed, adding more salt or lime juice to taste.
- Serve the guacamole immediately, or cover and refrigerate until ready to serve.

- Getting the avocado to lime ratio correct is essential. I provided a range of lime in the recipe because the size of avocados and their flesh/seed ratio can differ. Once the ingredients are blended, taste and determine if you'd like to add more lime.

- Water Method: Add a thin layer of water on top then seal the container tightly. When ready to eat, pour off the water and give it a stir. It might have a slightly different texture, but the flavor should be unaffected.
- Plastic Wrap Method: Add a layer of plastic wrap to the top and ensure the entire surface is touching the plastic wrap. Cover tightly with a lid and store in the refrigerator.
- Both the water and plastic wrap storage methods yield an optimal refrigeration storage time of 1-2 days.
- Due to the sensitivity of oxidation of the avocados, it is not ideal to freeze and thaw guacamole for consumption.
