Ingredients
1poundground breakfast sausage
2poundpackage Velveeta cheesecubed
10ouncecan Rotel (diced tomatoes and green chilies)undrained
Instructions
In a skillet over medium heat, cook and crumble ground breakfast sausage until browned and cooked through (about 5-7 minutes).
Pour the cooked sausage into a colander and drain excess grease. Blot with paper towels if needed.
To a 2 quart or larger crockpot, add half of the Velveeta cubes, half of the rotel, then half of the sausage. Repeat these 3 layers.
Cover and cook on low heat. Stir every 20-30 minutes, until melted and smooth. Add milk if a thinner texture is desired. Set the heat to warm.
Serve with individual small bowls as well as tortilla chips, corn chip scoops, crackers, or bread for dipping!

Pro Tips and Substitutions
Add Some Heat: There are lots of ways you can add an extra kick to this dip! Use hot breakfast sausage or a spicier variety of Rotel. You can also mix in jalapeños, add crushed red pepper flakes or cayenne pepper, or add a dash of hot sauce.
Adjust the Thickness: If your cheese dip is too thick, you can slowly add in milk. The longer the cheese dip sets on warm in the slow cooker the thicker it will be. Add a little bit at a time (around a ¼-1/2 cup), stir, then check if it's to your liking.
Types of Cheese: While Velveeta gives a creamy texture and is our favorite for this creamy dip, you can mix make it with a 8-12 ounces full-fat cream cheese or American Cheese with 1-2 cups shredded cheddar cheese. Just be mindful that the dip will have a different taste and texture.
Use Different Meats: Spicy sausage is our favorite protein in this dip, but you can also use crumbled, cooked, and drained ground beef or hot Italian sausage.
Creamy Variation: For an even creamier dip, add cream cheese or sour cream to the mixture. This will create a velvety texture and rich flavor.
Cooking Methods: You can prepare this dip on the stovetop or slow cooker. If cooking on the stove top, once the sausage has been browned and drained, add all 3 ingredients to the skillet and cook on low, stirring often until melted and smooth.
