Ingredients
1large English cucumberthinly sliced
1pintstrawberrieshulled and sliced in ¼-inch slices
¼cupthinly sliced red onion
¼cupthinly sliced fresh basil leaves
¼cup thinly sliced fresh mint
½cupcrumbled feta or goat cheeseoptional
2tablespoonsolive oil
2tablespoonsbalsamic vinegar
½tablespoonfresh lemon juice
½tablespoon honey
salt and black pepperto taste
Optional Topping: toasted almonds, sunflower seeds, or pine nuts
Instructions
In a large bowl, combine the prepared cucumber, strawberries, and red onion.
In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, and honey until well combined. Season with salt and pepper to taste.
Pour the dressing over the cucumber and strawberry mixture. Toss gently to coat all the ingredients with the dressing.
Add basil, mint, and crumbled feta or goat cheese (if using). Toss gently to mix everything together.
Transfer to a serving dish. Garnish with toasted nuts if desired. Serve immediately.
