Garlic Broccoli and Mushrooms

Ingredients
 

  • 4 cups fresh broccoli florets
  • 4 ounces sliced mushrooms
  • 3 garlic cloves thinly sliced
  • ¼ cup olive oil
  • seasoning salt or salt and black pepper amount as desired
  • ½-1 teaspoon crushed red pepper flakes optional

Instructions

  • In a large skillet, heat 3 tablespoons of the olive oil over medium-high heat.
  • Add broccoli florets and sliced mushrooms to the skillet. Stir well to combine. Cook 3 minutes or until the broccoli is vibrant green. 
  • Add garlic, red pepper flakes, seasoning salt or salt and black pepper, and remaining oil. Cook 1 minute, stirring occasionally. 
  • Add ½ cup water and bring to a simmer. Cover with a lid and cook 4 minutes. 
  • Uncover and cook until all the liquid has evaporated, about 1-2 minutes. 
  • Transfer to serving bowl. Add additional seasoning if desired.

  • Don't Overcook the Veggies: Often times, cooks will either overcook or not season their broccoli enough. Follow these steps precisely for a perfect crisp-tender broccoli and tender mushrooms!
  • Add More Vegetables: Feel free to throw in other vegetables like bell peppers, zucchini, or snap peas for extra color and nutrients.
  • Add Extra Flavor: Add more flavor by adding a splash of soy sauce, rice vinegar, parmesan cheese, oyster sauce, sliced green onion, or sesame seeds. Swap the water with chicken broth for extra richness.
  • Use Different Mushrooms: Experiment with different varieties of mushrooms such as shiitake mushrooms, portobello, cremini mushrooms, or oyster mushrooms.
  • Add Protein: To make this dish a complete meal, consider adding cooked chicken, tofu, or chickpeas.
  • Adjust the Heat: If you prefer less heat, reduce the amount of crushed red pepper or omit it entirely.

Storage

Store any leftover sautéed broccoli and mushroom in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm in the microwave or on the stovetop over low heat until heated through.
