Ingredients
1 ½-2poundsboneless, skinless chicken breasts or thighs
seasoning salt or salt and black pepperamount as desired
1 ½teaspoonsItalian seasoning
2tablespoonsall-purpose flour
2tablespoons olive oil
4tablespoonssalted butter
6minced garlic cloves
¼cupchicken broth or chicken stock
Instructions
Season chicken on both sides with seasoning salt or salt and black pepper, Italian seasoning, and flour.
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken, and cook for about 5-8 minutes on each side or until they are golden brown with an internal temperature of 155-160°F. The time will depend on whether you use breasts or thighs. Transfer the par-cooked chicken to a plate and set aside.
In the same skillet, lower the heat to medium and allow the pan to slightly cool for 1 minute. Add butter, and as it melts, scrape up any solid bits from the bottom of the pan.
Add minced garlic, and sauté for about 1 minute until the garlic is fragrant but not browned. If any flour remains on the cutting board, add to the skillet as well.
Add chicken broth, stirring to combine, and bring to a simmer.
Return the chicken to the skillet. Spoon the garlic butter sauce over the chicken, and let it simmer for about 2-3 minutes to absorb the flavors and reach an internal temperature of 165°F.
Remove from the skillet and garnish with fresh parsley or basil if desired. Serve alone or over rice, pasta, or potatoes.

Lightly dredge in flour. Be sure to shake off any excess flour from the chicken pieces. This gives them a nice crust after searing on the stovetop.
If your sauce is too thin. If the garlic sauce is too thin after making, simple whisk 1 teaspoon of cornstarch and 1 teaspoon of water together to add to the saucepan. Simmer until thickened to the right consistency.
Add some greens or herbs! Feel free to finish the sauce with fresh herbs like parsley or tarragon. You can also cook fresh spinach in the skillet and let it wilt into the sauce before serving too.
Don't overcook your chicken. If you chicken breasts are thicken, slice them in half widthwise to make them chicken cutlets for quicker cooking and to prevent them from being rubbery. Temp the chicken to 165ºF on a meat thermometer.
