Ingredients
3cupsself-rising flour
1teaspoongarlic powder
1teaspoonsalt
3tablespoonssugar
12ouncesbeer
8ouncescheddar cheesedice-size cubes or shredded
1jalapeño half sliced and half diced
¼cupmelted butterdivided
Instructions
Preheat oven to 375°F. Grease an 8"x5" loaf pan with butter or non-stick cooking spray.
In a large mixing bowl, whisk together flour, garlic powder, salt and sugar.
Fold in the cheese and diced jalapeño.
Add 3 tablespoons of the melted butter and beer to the flour mixture. Mix just until ingredients are incorporated, don't over-mix.
Pour the dough into the prepared loaf pan and spread evenly. Pour melted butter over the dough, then place jalapeño slices on top.
Bake 50-55 minutes or until a knife inserted comes out clean and the top is golden brown. Allow the loaf to cool 5 minutes, then transfer to a cooling rack. Slice and serve with butter or seasoned olive oil for dipping.
