Pimento Grilled Cheese

Ingredients
 

  • 2 slices bread your choice: white, whole wheat, sourdough
  • ½ cup pimento cheese or store-bought pimento cheese
  • 1 tablespoon mayonnaise or salted butter

Instructions

  • Preheat a skillet or griddle over medium heat.
  • Spread a thin layer of mayonnaise or softened butter on one side of each slice of bread.
  • On one of the slices of bread, spread pimento cheese evenly on the non-buttered/mayo side.
  • Top with the remaining slice of bread, buttered or mayonnaise side up.
  • Place the assembled sandwich on the preheated skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and crispy and the pimento cheese is melted and gooey. Adjust the heat as needed to ensure the bread doesn't burn before the cheese melts.
  • Remove the sandwich from the skillet and let it cool slightly before cutting in half. Serve warm.
