Ingredients
1-1 ¼ pound yellow baby potatoes
2ouncesseasoned garlic buttermelted
1 tablespoonranch seasoning mix
Instructions
Preheat oven to 425°.
Using a sharp knife, carefully score the inside of the potato surface in a criss-cross pattern.
In a baking dish, pour in the seasoning and ⅔ of the melted butter. Stir until combined well, then spread evenly over the bottom of the baking dish.
Lay the potatoes scored side down onto the butter mixture.
Brush the tops of the potatoes with the remaining butter and sprinkle with salt and black pepper if desired.
Bake 35-40 minutes or until the potatoes have browned and crisped on both sides.
If desired, add parmesan or cheddar cheese in the last 5 minutes of cooking. Optional, serve with bacon and/or sour cream or garlic aioli for dipping.
