Ingredients
1smallOnions 52 Red Onionsliced
1smallOnions 52 Yellow Onionsliced
2cupssliced sweet mini peppers
6ozgreen beans
2tablespoonolive oil
1tablespoonred wine vinegar
1teaspoonItalian seasoning
½teaspooncrushed red pepper flakesoptional
¼teaspoonsalt
¼teaspoonblack pepper
2tablespoonfresh minced garlic
1 ½lbpackage pre-cooked turkey, chicken or plant-based sausage pierced with a fork
1cupsliced fresh basil
Instructions
Preheat the oven to 400°F.
On a parchment paper-lined sheet pan, toss together onions, peppers, olive oil, vinegar, Italian seasoning, crushed red pepper, salt and pepper. Spread in an even layer and bake for 15 minutes.
Remove the sheet pan from the oven and toss the vegetables with the fresh garlic. Lay the sausage links on top, and return the sheet pan to the oven. Bake 15 minutes.
Remove the sheet pan from the oven and toss with fresh basil. Serve the mixture as a stand alone dish or as desired (see Tips and Substitutions).
