2 ½-3poundsboneless skinless chicken breakfast or thighs

Instructions
To a slow cooker, add apricot jam, onion soup mix, soy sauce, Dijon mustard, garlic powder, ground ginger, and seasoning salt. Shake ¼ cup water in the empty apricot jam jar, then add to the crockpot. Whisk until well combined.
Add the chicken breasts or thighs, ensuring the cutlets are well coated.
Cover the slow cooker and cook on low for about 6 to 7 hours or on high for 2 to 3 hours, until the chicken is cooked through and tender.
Once done, gently shred the chicken using two forks if desired, or serve whole. Spoon the sauce over the chicken for flavor. Garnish if desired.

Storage: This apricot chicken recipe is great for meal prepping and keeping in the fridge in an airtight container for up to four days. Reheat in the microwave or on the stovetop for a couple of minutes until warmed through.You can also freeze any leftover chicken as well for up to two months. Thaw on the countertop or in the fridge overnight and then reheat as instructed above.

It's easy to thicken the sauce if it's too runny. Simply mix 1 teaspoon cornstarch with 1 teaspoon water and stir into the slow cooker. Allow it to cook for another 20 minutes on low and stir to combine.
Don't cook the chicken before adding it to the crockpot. This is not necessary as this is a shredded chicken recipe. It will be cooked until perfectly moist and juicy on its own.
