Ingredients
1 lbground breakfast sausage
½ cupdiced bell peppers
3sliced green onionsgreen and white sections divided
1pinthalved Pure Flavor® Bumbles® Yellow Grape Tomatoes divided
2cupsshredded cheddar cheesedivided
8largeeggs
½cupmilk
1teaspoonsalt
½teaspoonblack pepper

Instructions
Preheat the oven to 350˚F.
In a 12-inch cast iron skillet or oven-safe pan, crumble and cook sausage until no longer pink. Discard excess grease. Add peppers and the whites of the green onions, and sauté until tender, about 3 minutes.
Turn off the heat, and add ¾ of the tomatoes on top in an even layer. Sprinkle 1 ½ cups of the shredded cheese on top.
In a large mixing bowl, whisk together eggs, milk, salt and pepper. Pour evenly in the skillet. Arrange the frozen Tater Tots over the egg mixture in concentric circles, starting with a row along the edge of the pan and working your way in.
Bake 35-40 minutes or until the eggs have fully set and the cheese has melted. Sprinkle evenly on top the remaining cheese and bake 5 additional minutes.
Cool 5 minutes prior to serving. Garnish with additional tomatoes, chives and hot sauce on the side.
