1poundfresh strawberries large and ripe
8ounceswhite chocolate high-quality bars or chips
1tablespooncoconut oil or vegetable shorteningoptional, for a smoother consistency

Instructions
Wash the strawberries gently in cool water and pat them dry completely with paper towels. Ensure they are completely dry, as any moisture can prevent the chocolate from adhering properly.
In a microwave-safe bowl, combine the white chocolate and coconut oil or shortening (if using).
Melt the chocolate in the microwave in 10-20 second intervals, stirring well between each interval until completely melted and smooth. Be careful not to overheat, as white chocolate can seize easily. Alternatively, use a double boiler: Place the bowl over simmering water, stirring until melted.
Hold each strawberry by the stem and dip it into the melted white chocolate, allowing any excess to drip off. You can tilt the bowl to help coat the strawberries evenly.
Optionally, you can sprinkle the dipped strawberries with crushed nuts, sprinkles, or shredded coconut before the chocolate sets.
Place the dipped strawberries on a baking sheet lined with parchment paper. Once they're are dipped, refrigerate for about 30 minutes to allow the chocolate to set completely. Optional, dye the leftover white chocolate with your desired color and drizzle on the berries. You can also drizzle on melted milk or semi-sweet chocolate. Refrigerate again for 30 minutes.

Storage: Store any white chocolate covered strawberries in an airtight container in the fridge for up to four days.We don't recommend freezing the strawberries since it will ruin the texture of the berry as well as the chocolate.Expert tips:
Be sure to wash and dry the strawberries well before dipping. Berries are actually sometimes coated in a preservative film that keeps the chocolate from sticking well. It's so important to wash the berries in water and dry them well too.
Pick a high-quality white chocolate. This is not only for taste but also the quality of the melt. Cheap white chocolate can often be grainy and seize when you are melting it, so pick the more expensive kind here (it's worth it!).
Melt the chocolate in the microwave or over a double boiler. If using the microwave, be sure to heat in 20 to 30 second intervals, stirring in between, to allow the chocolate to melt evenly. For a double boiler, heat 1-inch of water in a small pot until steamy. Place a heatproof bowl over the top and add the chocolate. Stir frequently until the chocolate is melted and smooth.
Decorate quickly after dipping. The chocolate sets fast! Especially once you pop the white chocolate covered strawberries into the fridge, so be sure to decorate fully before chilling.
